Chef Calenzo, who joined Four Seasons in 2023, has quickly become a prominent figure in Miami's culinary landscape. With a passion for Italian cuisine sparked during his upbringing in Florence, Calenzo refined his skills in Michelin-starred restaurants across China, England, Japan, and Hawaii. These international experiences have shaped his distinctive style, blending traditional Italian flavors with subtle Asian influences.
Signature dishes such as Vitello Tonnato, a classic veal entrée, and Cotoletta Alla Milanese, a breaded veal cutlet, highlight his commitment to high-quality ingredients and creative presentation. His leadership has earned Lido Restaurant prestigious accolades, including the Three Forks honor and recognition from Gambero Rosso, which named Calenzo “Chef of the Year.”
