Hiyakawa Launches New Washoku Tasting Menu

Hiyakawa, a Michelin-recognized restaurant in Miami, has introduced a new Washoku tasting menu. The nine-course menu, designed by head sushi chef Hiro Asano in collaboration with Ogawa’s Master Sushi Chef Masa Komatsu, aims to highlight the key elements of Japanese cuisine, focusing on seasonality, balance, and simplicity.

The menu includes a variety of dishes such as Kobachi (a seasonal appetizer with fermented vegetables) and Saba Misozuke (mackerel marinated in miso), alongside a selection of fresh fish sourced from Tokyo’s Toyosu Market. A traditional Edomae sushi sequence anchors the menu, complemented by a temaki hand roll and a dessert course. The tasting menu offers a balance of hot and cold dishes, using seasonal ingredients.


Álvaro Perez Miranda, the founder and CEO of APM Restaurant Group, has been instrumental in creating Hiyakawa’s approach to Japanese dining. Originally from Venezuela, Perez Miranda spent 15 years in Japan before founding APM and introducing Japanese culinary concepts to Miami. His commitment to authenticity, sourcing ingredients from Japan, and following the principles of Japanese hospitality have defined the restaurant's approach.

The $180 tasting menu is limited to 20 servings per day and will be available alongside Hiyakawa’s à la carte menu. The beverage list, curated by sommelier Luis Martinez, includes biodynamic wines and craft sakes from Japan.
