Novatore Cucina & Bar Brings Michelin-Recognized Italian Excellence to Wynwood

Novatore Cucina & Bar, an upscale Italian restaurant led by Michelin-recognized chefs Andrea Bernardi and Fernanda Fuentes-Cárdenas, has officially opened its doors in Miami’s Wynwood Arts District. Quietly debuted on March 8, the restaurant blends authentic Italian culinary heritage with modern innovation, offering a refined dining experience centered around house-made pastas, breads, and desserts.

The newest concept under GUSTATIO Group LLC—founded by Bernardi, Fuentes-Cárdenas, and partners Marcelo Marocchino and Gabriel Mendelzon—Novatore follows the success of Capogrossi in Chile and the Michelin-starred NUB in Tenerife, Spain. This latest venture brings their expertise to Miami, delivering a sophisticated yet approachable dining experience that highlights tradition, precision, and creativity.
“Our team is honored to collaborate with three Michelin-recognized chefs, whose expertise not only enhances the flavors of our cuisine but also elevates our techniques to the highest level of precision and artistry,” says co-owner Marcelo Marocchino.

At the helm of Novatore’s Miami kitchen is Executive Chef Marco Rama, whose experience at Italy’s Michelin-starred Andreina is reflected in the restaurant’s signature dishes. The menu showcases a modern take on classic Italian flavors, with standout dishes like Carbonara and Cacio e Pepe finished over charcoal for a subtle smokiness, and Il Carciofo, a perfectly brined and grilled artichoke served with Taleggio fonduta. Other highlights include the seafood-infused Gnocco and the decadent Aragosta e Midollo, which pairs lobster with bone marrow. Desserts, such as the 100x100 Pistacchio, celebrate Italy’s rich culinary traditions with innovative presentations.
Complementing the menu, the beverage program—led by mixologist Cristian Novelli—will feature classic Italian cocktails and curated flights, while sommelier Leonardo Asensos oversees an extensive 130-label wine collection.

Designed to reflect Roman grandeur with contemporary elegance, the restaurant’s interiors feature limewashed walls, walnut wood furniture, and intricate moldings, with an open kitchen that allows guests to witness chefs at work. A covered outdoor terrace, adorned with aromatic herb planters, will debut in the coming months.
