Each day, skilled crews set out into the Gulf’s pristine waters, carefully set their traps, and harvest the crabs, which are packed in ice and swiftly transported to Truluck’s kitchens. In just a matter of hours, the claws are served at the peak of freshness to diners who appreciate the difference that a commitment to quality and sustainability makes.

Each crab has two powerful claws for feeding and protection, and they regrow any claw that’s removed. However, since stone crabs are wild and unpredictable, supply can be inconsistent.
